Recipe for Hot Cucumber Soup sent in by: Pat Arnell

Ingredients for Hot Cucumber Soup:

  • 800 gram cucumber
  • 2 tbspns virgin olive oil
  • 4 spring onions
  • 225 g potatoes
  • 1 – 1½ pt chicken or vegetable stock

Method for Hot Cucumber Soup:

  1. Cut cucumbers in half lengthways; scoop out seeds and discard them; chop cucumber finely
  2. Finely chop spring onions and finely chop potatoes
  3. Heat oil in large pan and sauté spring onions and cucumber for a few minutes then add potatoes and stock; bring to boil and simmer for approx 20 minutes until vegetables are tender
  4. Adjust seasoning and serve

Notes:

This soup freezes well – double up or treble as circumstances dictate

So easy to make and delicious! Try adding a little grated cheese on top when serving. Lovely with some crusty home made bread.

    hi there,i am sat eatin the most amazin soup! its a variant of your hot cucumber soup only i have added some black peppercorns an used sweet potato instead of a white potato! i also like to give the soup a good whizz with a hand blender jus before serving thus making the soup thick an creamy! enjoyin a few of your recipes from the website!     I’ve just made this soup and put it through a blender at the end. Also added a couple of cloves of pressed garlic, a little salt and ground black pepper. Delicious.

    This method works so well – I’ve enhanced my home-made variety with the addition of half a dozen fresh borage leaves (which also taste of cucumber – and high in health-giving vitamins) – and a LITTLE soured cream to lighten the beautiful green finish

    Lovely soup, I make soups all the time, I grow my own vegetables, and do not waste anything, leftovers go into blender with stock cube etc. but instead of cream, I use phily cheese, different flavours for diff. soups, and as I am a vege, it gives me a litle protein as well. My cucumber plant looks like a trivid at the moment.

    We had this soup for tea tonight and it was lovely. A really fresh summery taste. I added a bit of fresh mint and black pepper. I thought a might add a few fresh peas next time.

    I just made this soup tonight after my mum bringing me plenty of cucumber from the garden. I added salt and pepper and plenty of garlic plus two chicken stock cubes and a vegetable one along with some peas. Blended it up then added some (not alot) clotted cream which gave it this amazing creamy taste to it.

    Brilliant recipe and so so simple too.

    I made similar recipe with celeriac and potatoe and onion and a clove of garlic .. all chopped up. Then added salt, pepper, chicken stock, nutmeg, ginger, worcester sauce and mild chili.. kept tasting to make sure it was good the extra pinch of salt got it right!!!

    This soup is so good, made extra large pan full, had it hot first day, next day had it cold from the fridge with a little yogurt drissled over top. Will be making another batch to freeze for the winter as this year we planted an old variety called Fagusha (not sure if spelling correct). Lots of large, very crisp cucs that last a good while in the fridge, and don’t wilt.

    WOW I grow cucumbers but I am not overly keen on them… the rest of the family cant eat them quick enough, so decided to try the soup….. very impressed, its very tasty, and very easy to do, I have got to say!!! Deffo on my soups list along with the courgette soup….. mmmmmmm

    I’m not a lover of cucumber but we had so many this year in the veggie plot I needed ideas as to what to do with them.(Other than feed them to the pigs). Well, who knew cucumbers could taste so good when made into a soup. This is a delicious recipe and I’m totally converted! Thank you!

    Looks simple and fairly quick and it is but the taste is complex, rich and gorgeous. My husband adds cheddar cheese. I add double cream to mine although it is not really necessary. No need for complicated recipes.

    Well, I was sceptical about this recipe, but made it last night and was impressed! Used chives and a bit of onion instead of spring onions, and put a sprig of mint in as well. Blended together with a splash of milk, then seasoned with black pepper and nutmeg – no salt!

    Nice soup, will definitely be making more next year. A couple of things I found with it:

    It has a tendency to clump together when defrosted, a quick whizz in the blender quickly puts that right,

    For me the flavour lacked acidity, I found that adding a little lemon juice really brightened it up.
