Celebrity Truffle Chevre

Made in Lindsay, Ontario with pure goat milk supplied by Lenberg Farms, a family owned and operated 100 acre goat and sheep dairy farm located near Lindsay, Ontario.  Additional goat milk is purchased locally from 45 family run farms.

This truffle infused chevre is carefully blended and portioned to add the right amount of flavour to each log. The fresh tangy goat cheese paired with earthy truffles is an excellent combination to enjoy on crackers, in your favourite sauces, pasta and ristotos or crumbled over salads and pizzas.

Feature Recipe - Rib Steak with Truffle Chevre

Truffle Chevre Steak

Ingredients
2 rib eye steaks (bone-in)
1-2 cloves of garlic, peeled and thinly sliced
10 sprigs fresh thyme
kosher salt and freshly ground black pepper
1 teaspoon olive oil
1 tablespoon butter
1 Truffle Chevre log
Instructions
-Preheat oven to 350 degrees F.
-Season the steaks generously with salt and ground black pepper.
-Heat a cast iron pan on the stovetop over high heat. Melt the butter in the olive oil.  Add the steaks and sear on the first side for about 2 minutes, then flip over and sear the other side for about 2 minutes; you should have a nice golden-brown crust.
-Remove from heat and add the garlic slices and thyme, turn the steak onto it’s side, and carefully slide a digital thermometer through the middle and side of the rib eye, and place the skillet with the rib eye into the oven until the thermometer reaches 130° for medium-rare. About 5-10 minutes.
-Meanwhile, remove the Truffle Chevre from the refrigerator and slice into ½ inch pats.
-Remove the steak from the oven, spoon cooked juices over the steak and top with a pat or two of Truffle Chevre and allow it to rest, lightly tented with foil, for about 10 minutes. Garnish with more fresh thyme if desired.
