The Sheriff's Department is accepting applications for Sheriff's Cooks II who are responsible for the preparation of food and for the security and supervision of inmates in the kitchen area of the institutional facilities of the Sheriff's Department.  This position will work directly with inmates to supervise and train in the safety, preparation and serving of meals, including proper sanitation and ware washing.  These positions are also responsible for ensuring constant care and control of all kitchen tools, equipment and utensils.

CONDITIONS OF EMPLOYMENT
 
1) Background:  Prior to appointment, applicants will be fingerprinted and must pass an extensive background investigation, including a polygraph examination. Applicants must not have been convicted of a felony.
2) Shift; Incumbents will be required to work weekends, holidays, rotating shifts and overtime as needed. 
3) License:  A valid California Class C driver license is required at time of appointment. Employees in this class may be required to use personal vehicles and show proof of automobile liability insurance.
4) Travel throughout the County may be required.  A valid California Class C driver license is required within two weeks of appointment.  Incumbents may be required to obtain a Class B driver license with an airbrake endorsement.
5) Location:  Positions may be located in San Bernardino, Rancho Cucamonga or Adelanto 
6) Physical:  This position requires lifting up to 50 lbs., standing, squatting, and reaching. 
7) Certificate: Incumbents must obtain a San Bernardino County Food Handlers Certificate within two weeks of appointment.

Minimum Requirements

Experience:  Two (2) years (full-time equivalent) experience within the last ten years as a banquet cook, cafeteria cook, military cook or other similar institutional cook performing large quantity cooking, preparing single recipes in batches to serve 100 persons or more at one time.

Certificate:  A community college Certificate in Food Service Management, Institutional Cooking or a closely related field may substitute for up to twelve (12) months of the required experience.  A legible copy of the certificate must be submitted with the application.

Desired Qualifications

Experience as an institutional cook with lead/supervisory responsibilities and experience as a correctional cook are both highly desirable.

Shift: The County detention facilities operate on a 24 hour a day basis, seven days a week, including nights, weekends, holidays, and may be required to work overtime. Physical: Sheriff's Cooks work in an industrial cooking environment and prepare meals in large quantities and must lift, carry, and move cooking supplies and equipment including large bags of beans, flour, sugar and other items. Cooks must have the ability to stand or walk for long periods of time; along with the ability to bend, stoop, squat, reach and lift up to 50 pounds and carry for short distances.
