The Job




The Probation Department is recruiting for Probation Cooks I who participate in and oversee the preparation of meals at a Probation Department institutional facility.  These positions are responsible for the supervision and training of food service staff; determining quantities of food to prepare; preparing, cooking, and seasoning of food; serving and supervising the serving of food; and maintaining security through constant control of kitchen tools and equipment.

CONDITIONS OF EMPLOYMENT
 
1) Work Shift: Incumbents may be required to work weekends, holidays, rotating shifts and overtime.

2) Background: Prior to appointment, applicants will be fingerprinted and must pass a background investigation. Applicants must not have been convicted of a felony or currently be on court ordered probation (or have been within the last year).

3)  Location: These positions are located in San Bernardino or Apple Valley.

4) Travel: Travel throughout the County may be required to fulfill shift demand and meet operational need. A valid California Class C driver license is required within two (2) weeks of appointment.

5) Physical: These positions require lifting up to 50 lbs., standing, squatting, and reaching.

6) Certificate: Incumbents must obtain a San Bernardino County Food Handlers Certificate within two (2) weeks of appointment.

Minimum Requirements

Applicants must meet one of the four options listed below:

Option A:  One (1) year of experience as a banquet cook, cafeteria cook, military cook, or other similar institutional cook performing large quantity cooking, preparing single recipes in batches to serve 300 persons or more at a time.

Option B: Two (2) years of experience as a banquet cook, cafeteria cook, military cook or other similar institutional cook performing large quantity cooking, preparing single recipes in batches to serve 100 persons or more at a time.

Option C: Three (3) years of experience performing as a lead cook in a restaurant, hospital, school, convalescent home, fast food or similar environment.

Option D: A community college Certificate in Culinary Arts.  A legible copy of the certificate must be submitted with your application or turned in on/or before recruitment deadline.

Desired Qualifications

The ideal candidate is a current food industry employee who is innovative, takes initiative; and is able to adjust and develops new recipes; and works equally well in a team, or independently, and as a lead. Additionally, this ideal candidate has industrial level cooking experience, excellent overall knowledge and information of different techniques such as stewing, roasting, boiling and baking. The incumbent has strong work ethics, integrity, versatility, able to take direction, and gives attention and focus to customer service.
